Jowar, bajra, and ragi flourish in rainfed conditions. Unlike paddy cultivation — which needs flood irrigation — millets grow on natural rainfall alone, using up to 70% less water. The most protein-dense of all millets, bajra is India's original winter warmer — consumed across Rajasthan, Gujarat, and Haryana for generations. Ragi is the calcium king of the grain world — with more calcium per gram than milk, it's the reason southern Indian grandmothers have been feeding it to children and elders for centuries. Its distinctive earthy taste deepens in roasted form. Ragi is also one of the richest plant sources of essential amino acids, making it a near-complete protein source.
